POLISH POTATO DUMPLINGS

10 cups mashed potatoes
4 eggs
1 cup Flour
Extra flour enough to roll
Salt and pepper to taste

Mix potato, eggs and flour till you have a doughy consistency. (like scones)

Cut dough into four portions, roll into long sausages cut each roll into 2cm dumplings and drop into boiling water until firm. Drain. Can be served with a variety of different sauces or added to soups.

Mushroom Sauce

3 cups mushrooms, roughly chopped
Butter
Cream or sour cream
egg yoke

Cook mushrooms in butter (as much as your heart can handle :) )
Add cream to make a nice sauce simmer (do not boil)
Keep stirring whist adding egg yolk, don't stop stirring or you will end up with the yolk setting instead of combining. Stir till sauce thickens.

Pour over dumplings, garnish with parsley.
