View Full Version : Filipino: Chicken Adobo

This is a recipe my dad (who is Filipino) taught to my brothers and I - we love it!!!!!!!!!!! :D

There are a couple of different versions but this is our favourite style - it is much soupier and I recommend adding lots of the liquid to your bowl and letting the rice soak it in a little before eating.

Can also be made with pork or a mixture of pork and chicken (yummmm) :drool:

Also good to make in a slowcooker if you have one! be sure to use fattier cuts of meat so it is really tender!

Ingrediants:
800gm chicken breasts or thighs cut into big pieces (halves or quarters) or 3lb chicken pieces on the bone (whatever you prefer)
1 onion (cut in half)
3 or 4 medium potatoes cut into quarters
1 clove garlic crushed
1/2 cup brown vinegar
1/4 cup soya sauce
1 dspn sugar
2 cups hot water
1 litre of chicken stock (campbells is good)
pepper
salt
3 bay leaves

Method:
Brown the chicken in big pot (or fry pan if planning to use slow cooker)

Add the garlic and onion and fry for about 30 seconds to start to release the flavours.

Add all of the liquid ingrediants, potoatoes and bay leaves.

Add salt and pepper to season.

If using slow cooker, cook on low for 10 hours (depending on the size of cuts of meat you use... dont want them to disintegrate away!) If in big pot cook on stove top on low heat for an hour or so..... until all meat cooked through and potatoes REALLY soft YUM!!!

Serve over steamed rice.

Add extra splash of soya sauce to taste
