:yep:Traditional real porridge (delicious! Totally different from the packaged variety) serves 2
1/2 cup steel cut oats
1 – 1½ cups water
salt to taste
1. Soak the oats in 1 cup of water overnight (in a hot climate this should be left in the fridge to prevent it going rancid).
2. If cooking on a cooktop; add the other 1/2 cup of water then bring to the boil and simmer for 7 or 8 minutes, STIRRING ALL THE TIME (to prevent boiling over, lumps and burning).
Alternatively (and easier!) use a microwave oven; OMIT the additional 1/2 cup water and cook in a tall clear container (to let you see if it is going to boil over) for 5 minutes on High — but again keep an eye on it. If it boils up, stop the oven and stir, then continue cooking. The stirring only needs to be done once to spread the heat evenly. When cooked add a small amount of HOT water if the porridge is too thick.
3. Stir in salt to taste (SOME is needed to bring out the flavour) but NOTHING ELSE!
4. Serve by pouring the thick HOT porridge into one bowl, some COLD milk or cream into another, and eat by spooning up a small amount of porridge then dipping the spoon into the other bowl to add cold milk to the delicious mouthful.
